Vegetarian Vegan Mushroom Gravy Recipe
Gravy is one on favorite dishes at Thanksgiving. Gravy is not one of my favorite sauces, or sides, or add ons (like disgusting cranberry sauce); but Gravy is one of my favorite main courses. I would not be surprised if I just ate this recipe like soup. When I decided to become vegan/vegetarian, I thought I had to say good bye to this meaty greasy divine boat of love that is gravy. Not since I found out about mushroom gravy. I will show you how to make vegetarian gravy to fill your love boat again as well.
Ingredients for Mushroom Gravy:
- ¼ cup vegan margarine
- 8 oz Baby Portabella Mushrooms, chopped
- 1 small onion, minced
- 2 ½ cups vegetable broth
- 2 tablespoons soy sauce
- ¼ cup flour
- ½ teaspoon sage
- ½ teaspoon salt
- ½ teaspoon black pepper
Directions on how to make Mushroom Gravy:
Melt vegan margarine in a large skillet over high heat.
Add onions and mushrooms to the skillet and sautee until onions a translucent (about 2 minutes).
Reduce heat to medium. Sprinkle flour evenly over vegetables.
Slowly stir in vegetable broth and soy sauce to avoid lumps.
Reduce heat to a simmer, which is really low heat. Add in sage, salt, and pepper.
Allow the gravy to simmer and thicken for about 10 minutes. Stir slowly and almost constantly. Do not walk away from the stove!

Great idea to use mushroom. I think it provides that thick umami flavor you find in regular gravy.
