This Christmas has come and gone, but it is still wintertime. Or is it? While there is only a slight chill in the air, I want to feel warm and cozy. This vegan rice pudding is warm, creamy, cinnamon-y, and oh so cozy. Enjoy.

Ingredients:
1 cup rice, cooked
2 cups almond milk
1/4 cup agave nectar
1 tablespoon maple syrup
1/2 banana, chopped
1/2 teaspoon apple pie spice (cinnamon, nutmeg, allspice blend)
1/2 cup raisins
1/2 teaspoon vanilla extract
Directions:
Place cooked rice in a large saucepan over medium-high heat.
Add in almond milk, agave nectar, maple syrup, banana, apple pie spice, and raisins. Stir until well combined.
Bring to a boil and then allow to simmer for 30 to 45 minutes, stirring occasionally, until rice has reached a creamy consistency. It should still be very moist.
Remove saucepan from heat and stir in vanilla extract.
Serve warm and enjoy your vegan rice pudding.

We just found you by accident. Sienna (11) is home from school and we were looking for a vegan rice pudding. She loves cinnamon .We had some cooked brown rice. It came out great! We love that your grandma decided to be in it. Thanks.

I am a little confused. You are supposed to prepare 1 cup of dry rice in the usual way before you begin making this recipe. You are not supposed to prepare rice in the usual way, and then measure out a cup of it for this recipe. Right?

Hi, it is me again, Matt. I am preparing this recipe right now. Tasha’s secret ingredients like banana, two types of sweetener, and apple pie spice really make this vegan rice pudding special. I never heard of using them in rice pudding! One secret ingredient is so secret that she doesn’t even list it in the recipe, although I see her add it in the video. How much earth balance does Tasha add? She mentions a little, and it looks like two or three tablespoons to me. Is this right. I was wondering if others had the same question.
