Vegan Peanut Butter Oatmeal Chocolate Chip Cookies Recipe – Vegan MoFo Day 3

Oatmeal Cookies have always been one of my favorite. I just love cookies in general, but there is something about oatmeal and cinnamon that is just so simple and pure. But today, we are going to spice it up with a little peanut butter and chocolate chips. Just because I felt like it.

Vegan Peanut Butter Oatmeal Chocolate Chip Cookies Recipe

Ingredients:
1 cup all purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 teaspoon cinnamon
½ cup of vegan butter
½ cup white sugar
½ cup of peanut butter
1/3 cup of light brown sugar
½ teaspoon vanilla extract
¼ cup applesauce
1 tablespoon of white vinegar
½ cup rolled oats
1 cup of semi-sweet chocolate chips

Directions:

Pre heat the oven to 350 degrees F and line two cookie sheets with parchment paper.

In a large bowl, sift together flour, baking powder, salt, and cinnamon.

In a separate bowl, use an electric mixer to cream together vegan butter, peanut butter, white sugar, brown sugar, vanilla extract, and applesauce. Slowly mix in the flour.

Lastly, stir in oats and chocolate chips.

Use a cookie scoop to drop the cookie dough onto the parchment lined cookie sheets.

Bake for about 10 minutes or until golden brown. Cool completely on baking sheet.

Store in airtight container at room temperature.
