Vegan Black Eye Pea Hoppin John Recipe

Ingredients:
1 tablespoon olive oil
1 cup onion, chopped
½ cup celery, chopped
½ cup green pepper, chopped
1 tablespoon minced garlic
1 pound black eyed peas, soaked overnight and rinsed
1 quart vegetable stock
½ tablespoon salt
½ teaspoon pepper
1/2 teaspoon poultry season
1/2 teaspoon liquid smoke
¼ cup maple syrup
3 cups cooked rice
Directions:
Heat oil in a large pot.
Add in onions, celery, garlic, and green pepper and allow to cook for four minutes.
Next, stir in black eyed peas, vegetable stock, salt, pepper, poultry season, liquid smoke, , and maple syrup.
Allow to boil for one minute, then reduce to a simmer for 40 minutes until peas are tender. Be sure to store occasionally.
Serve hot over rice and enjoy your vegan New Year’s with Vegan Hoppin John Black Eyed Peas.

Looks pretty damn good. I don’t eat a lot of black eyes peas but I bought some dried ones the other day and I think I might be making this recipe.
