Vegan Eggnog Recipe

Yields 12 servings
Ingredients for vegan eggnog:
- 1 ripe avocado
- 1 13 oz can coconut milk
- ½ cup raw sugar
- 2 tablespoons fresh lemon juice
- ½ teaspoon pure vanilla extract
- 1 teaspoon ground nutmeg
- ¼ teaspoon ground cinnamon
- 1/8 teaspoon cloves
- 3 1/3 cups almond milk
- Rum optional
Directions on how to make vegan eggnog:
Chill avocado and coconut milk in the freezer for about 45 minutes prior to blending. They should be very cold, but not frozen. It is very important that you complete this step.
Place all of the ingredients into the blender: meat of the avocado, coconut milk, raw sugar, lemon juice, vanilla extract, nutmeg, cinnamon, and cloves. Start the blender and slowly add in almond milk.
Blend until smooth. Serve immediately.

so excited to try this! used to love egg nog as a kid until i found out that there were eggs in it lmao. I was wondering if i dont serve it immediately what will happen? will it separate or change flavor etc?
I continued to drink it all that day and it was fine. The next day, the avocado started to brown and the flavors were not as bold.
Hi! Very happy to stumble upon your videos on youtube. I’m not vegan but have recently discovered I have food sensitivities to wheat, dairy, eggs & yeast so I am looking forward to trying this dairy and egg free egg nog! Eggnog isn’t hugely popular here is Australia but my boyfriend’s dad is American and I’m sure he will appreciate a bit of Eggnog at Christmas. Cheers!

Why do you say this is without nuts when you’re using almond milk?

Not a mistake at all – you were absolutely right:
This is without nuts as almonds botanically are not nuts (rather peaches), even though they’re often used as such.

So excited!!! I’m in fact looking for a recipe of “rompope”, which is a traditional drink that was done in convents with a lot of eggs… the colour of the drink is tipically yellow cause of the yolks.
I’ll try this recipe definetely, cause my boyfriend loves rompope and till the moment I haven’t been able to mimic the flavour in a vegan recipe!!!
