Vegan Apple Fritters Recipe – Vegan MoFo Day 2

I was inspired to make Vegan Apple Fritters, because it was the first thing that came to my mind this morning. I think it speaks to the fact that I am always thinking about apples. I love apples. It is the perfect fruit. My favorite variety is Golden Delicious and Honey Crisp. They are both divine! So on to the Vegan Apple Fritter Recipe . . .

Ingredients:

Fritter:
1 cup all purpose flour
¾ teaspoon salt
1 ½ teaspoons baking powder
1 teaspoon cinnamon
¼ cup almond milk
¼ cup agave nectar
¼ cup apple sauce
1 cup chopped Golden Delicious apple

Glaze:
1 cup powdered sugar
¾ tablespoon lemon juice

Directions:

Sift together flour, salt, baking powder, and cinnamon. In a separate bowl, wisk together almond milk, agave nectar, and apple sauce. Add the almond milk mixture to the flour, and stir until well combined. Fold in chopped apples.

Add oil to frying pan until it is about 1 inch deep. Heat pan on high. Once the oil is hot, add the fritter mixture by the spoon full. Cook until brown, about 2 minutes on both sides.

Move fritters to a paper towel to absorb excess oil.

To make glaze, simply stir the powdered sugar and lemon juice until it forms a smooth consistency.

At this point, you may choose to drizzle the glaze over the apple fritters or just serve it on the side for dipping.

I made a low-carb low-fat stovetop version of these using the above as a baseline–thanks so much for posting the recipe!
I will be making these again! I’m a vegan girl addicted to sweets, I’ve been trying multiple dessert recipes lately :)

Made these tonight and they are amazing! I was a bit nervous because I’m not a ‘baker’ and everything I make usually turns out burnt or tasting bad….this time not so! They are awesome! Thanks for the recipe! To heck with the diet, eh? It’s Christmas! LOL!
