Tip #1: Always make sure you have all the ingredients before you start making anything.
Tip #2: Be prepared to wash dishes.
The crust of the cupcake was amazing, but the inside of the cupcake was dense. It did not bake up like a regular cupcake and I was really disappointed. I ended up digging the centers out and just eating the crust, because like I said it was really good.
I do not know what I will do next time to fix this problem. I partly blame the EnerG Egg Replacer. I really do not know what consistency I should look for when I blend it or how long to blend it. We will see the next time I have to use it.
The Cream Cheese Icing was made with Tofutti. When I tried the icing alone, it did have a little tofu undertone. When I paired the icing with the cupcake it tasted really good. It did not over power the cupcake. It just complimented it with moisture and flavor.
