Easy Apple Galette Recipe

Apples rule the world . . . or at least they should. I love apple pie. Even after going vegan, I still loved apple pie. I did not know how to make an apple pie before going vegan and I am still pretty bad at it. A Galette is a little easier because you just throw the apples in and fold up the pastry dough. Pastry dough and apples, and (vegan butter); I am in heaven.

How to make a Vegan Apple Galette?

Ingredients for Pastry Dough:
1 cup unbleached all-purpose flour
1/2 teaspoon plus 2 tablespoons sugar
1/8 teaspoon salt
6 tablespoons vegan butter, chilled and diced
3 1/2 tablespoons ice water

For Apple Filling:
2 pounds apples (Golden Delicious preferred), peeled, core, and sliced
2 tablespoons unsalted butter, melted
3 tablespoons agave nectar

Directions:

Preheat oven to 400 degrees F.

Whisk together flour, 1/2 teaspoon sugar, and salt in a large bowl. Add in small pieces of vegan butter. Use a fork to cut the vegan butter into the flour until it forms a coarse cornmeal mixture.

Mix in water a little at a time and toss with hands until you are able to form the dough into a ball.

Create a round disk with the dough and place it on floured parchment paper.

Roll out the dough to a 14 inch circle and 1/8 inch thick. Layer the apple slices around the dough leaving 2 inches on dough free around the edges. Then fold the edges of the dough inward and crimp.

Brush the dough and apples with melted vegan butter. Pour agave over apples and sprinkle dough with 2 tablespoons of sugar.

Dust away excess flour and place apple galette and parchment paper of a baking sheet.

Bake for 45 minutes, rotating every 15 minutes. Remove galette from baking sheet and allow to cool on a rack for 15 minutes before devouring.

Devour.
