Day 16: Spinach Stuffed Mushrooms Recipe – Southern Queen of Vegan Cuisine Project

I loved stuffed mushrooms. The recipe that we a vegan-izing from Paula Deen’s Southern Cooking Bible is for Bacon and Spinach Stuffed Mushrooms. While I could make or by a vegan bacon, I decided to spare up all and just play up the spinach. For starters, I have replaced the frozen spinach (which I believe to taste like dirt) with fresh spinach. I really like mushrooms and greens, so the only way this can go wrong is if my vegan cream cheese decides to phone it in.

Spinach Stuffed Mushrooms Recipe

 
Ingredients:

20 large white mushrooms
1 tablespoon of olive oil
10 ounces fresh spinach
8 ounces cream cheese, chives and garlic variety
1 tablespoon soy sauce
1 teaspoon hot sauce
salt and pepper to taste

Directions:

Preheat the oven to 400 degrees F.

Remove the stems from the mushrooms caps and clean with a wet paper towel. Place the mushroom caps, cavity size up, in a baking pan.

Heat olive oil in a large skillet over medium heat. Rinse spinach, before sautéing in olive oil until it has wilted, but still maintains the bright green color (about 2 -3 minutes).

Remove skillet from heat, then add in vegan cream cheese, soy sauce, hot sauce, salt, and pepper. Mix well until creamy spinach emerges.

Evenly distribute the creamy spinach throughout the mushrooms caps using a spoon.

Bake the stuffed mushrooms for about 15 – 20 minutes until the tops are golden brown.

Serve warm, but not hot.

My Verdict:

Delicious! The cream cheese-spinach filling reminds me of this spinach dip my roommate taught me how to make in ungergrad. The stuffed mushrooms were lightly seasoned at every step which made them pretty perfect and my non-vegan family members really enjoyed them. And buying the chives and garlic cream cheese was the right move.
