Classic Cornbread from By Any Greens Necessary

If you did not know, I am from the south. Many people in the south eat rice with every meal, well, they also eat cornbread with every meal. I grew up loving cornbread. My favorite cornmeal in the world, Jiffy, has some type of animal lard in it, so that was Xed. I tried a couple of recipes, but none came out like this one from By Any Greens Necessary. It was light, fluffy, and just good.

Only negative I had was that the olive oil come through a little strong. It did not really bother me, but it may bother some. At the same time, some cultures eat olive oil slathered on bread, so it could be a good thing. This cornbread paired perfectly with my pinto beans. I can see it going well with any broth or pot likker. It was great, next time I will use a little less olive oil and hopefully it will be even Awesomer!

If I would have waited a little long to cut it, it would not have crumbled up like this.
