I purchased a new cookbook! It is entitled Vegan Baking Classics by Kelly Rudnicki. She states in the very beginning of the book that she has five kids and not a lot of time to run around searching for exotic ingredients. She is my kind of girl. With my time and budget constraint, I do not have time of money to waste on complicated recipes.
The first recipe I am trying from this book is Blueberry Bread. While I do not believe I am at liberty to share the recipe, I will share my honest opinion. I started by preparing the ingredients and I must say the zesting and squeezing oranges was time consuming. But I am a novice, so this may not be true for you.

This looks fluffy and amazing. It rose up so nicely.
It did, it was sooo good, and my classmates liked it too!
