Harry Potter and the Deathly Hallows Part 2 is coming out July 11. In order of the last Harry Potter movie, I will demonstrate how to make rock cakes. This is a vegan version of the recipe and has my own little twist. Enjoy this delicious treat before, after, or during the Harry Potter movie.
How to make Rock Cakes?
2 cups all purpose flour
1 teaspoon baking power
¼ teaspoon salt
1/2 cup white sugar
1 tablespoon brown sugar
1/2 tablespoon cinnamon
¼ cup Earth Balance buttery spread, melted
¼ cup applesauce
1 tablespoon vinegar
1 cup almond milk
½ cup raisins
½ cup chocolate chips
1. In a large mixing bowl, whisk together the all purpose flour, baking powder, salt, white sugar, brown sugar, and cinnamon.
2. Next, stir in melted margarine, applesauce, vinegar, and almond milk.
3. Lastly, fold in raisins and chocolate chips.
4. Bake at 375 F for 20 – 25 minutes.
